Callebaut Chocolate from Belgium is probably the most popular chocolate with professional and home chefs all over the world. It has become the standard against which all other cooking chocolates are judged. These couvertures are available in 5 kg (11 lbs) blocks or 10 kg (22 lbs) bags of "callets" (drop form).

This 5 kilo/11 pound block of chocolate is the standard format for all Callebaut chocolate. This thick piece tends to maintain freshness and flavor longer than the callets. Most block is made with natural vanilla (NV).

This chocolate has become the Callebaut standard for bittersweet chocolate in the US. It does have a high cacao content at 60.5%, however, it uses a low-fat cocoa powder in the formula. Therefore it has lower butter fat and is thick and not appropriate for a coating chocolate. Applications are mousse and ganache. Butter 26%.

This Milk chocolate has a slightly different formula, with more cacao and less milk vs the popular C823, and which is used is just preference. It actually was one of the first milk chocolates imported from Callebaut almost 40 years ago. Surprisely, it is less expensive than the alternate. 5kg blocks (11 lbs)

Callets
BARRY% Callets
This is the same formula as the blocks, but it comes in small drop-like pieces of chocolate. This format is much prefered by chefs as it is easier to weigh and melt. Most formulas are now made with natural vanilla, (vs. vanillin, an artificial vanilla) and come in 10kg/22lb bags.
