Guittard Chocolate Company has been manufacturing fine chocolate products in California since 1868. The cocoa beans used to make each of these single origin chocolates come from four different growing regions in four different countries. The different "terroir" or soil composition naturally create four unique flavor profiles.

Sur del Lago’s criollo and trinitario hybrid heritage, with dominant criollo genes, creates a complex chocolate. The criollo ancestry produces a delicate chocolate of a lighter color than other chocolates -- a radiant, rich red in the case of Sur del Lago. There are deep red fruity notes, sometimes described as berry or cherry-like. With a natural acidity, Sur del Lago marries beautifully with all sweet flavors, such as caramel and fully ripe fruits but also shows off exquisitely in the simplest of desserts, such as a classic chocolate cake or chocolate ice cream.

Ecuador Nacional is a highly rarified forastero whose history is associated with the older cacao plantations in Ecuador. Ecuador Nacional produces a chocolate that is lightly floral with strong herbal overtones. It is more astringent than other cacao beans and has no acidity. The flavors of Ecuador Nacional linger long in the mouth. Use this chocolate in desserts that have high butter and cream contents.

Made from a trinitario cacao bean, this varietal has a dark chocolate color. It has a mild acidity and a slighly floral flavor. These flavors work well in everything from a simple cup of hot chocolate to complex desserts. Team up the Colombian chocolate with coffee flavors, or use it in a ganache that has been infused with tea.
