Description
This chocolate is a blend of nine select Criollo, Trinitario and Forestero cacao beans from Central and South America, South Pacific, East and West Indies and Indian Ocean rain forests. Each varietal is individually roasted to perfection to maximize its flavor potential and unique characteristics and then meticulously blended to create a balanced chocolate of many layers of flavors. Delicate and smooth, the base chocolate flavor is accented with tart plums, green tea, lavender and earthy spicy notes of toasted anise.
It is appropriate for all applications which call for dark chocolate but would be particularly good in truffles and ganache and other uses which allow the unique flavors to come through.
