This 65% dark chocolate couverture is made from the trinitario cocoa bean from Columbia. It has a dark brown color, and the flavor is accented with floral notes and is mildly acidic. This 65% dark couverture is made from cocoa beans from Peru – and named after the sacred mountain, Machu Picchu, near the Urubamba River. There are floral notes with hints of banana and grapefruit in this buttery smooth couverture.

This is a superior chocolate chip (drop) made with 63% cocoa so it produces a strong, not-too-sweet chocolate taste in your cookies or other baked goods. It is 900 ct (per pound) so slightly larger than the standard nestle morsel size. The higher chocolate content is part of a healthy trend in all foods as it lessens sugar intake and increases cocoa intake (good for the heart!!)
