This intense chocolate has become the Callebaut standard for bittersweet chocolate in the US. It does have a high cacao content at 60.3%, however, it uses a low-fat cocoa powder in the formula. Therefore it has lower butterfat and is thick and not appropriate for a coating chocolate. (1-drop liquidity)
It works great for ganache and any application which does not require high fat content. (ice cream, mousse etc)
Ingredients: Cocoa beans, sugar, defatted cocoa butter, non-GMO soy lecithin, natural vanilla extract.
Uses: Mousse and ganache.
