The valrhona experts replaced cocoa solids with powdered passion fruit juice creating a powerful and intense passion fruit flavor. This means you can use this special chocolate as you would any other chocolate. (There is no milk in the formula)
It is especially good for molding as well as ganache and mousse.
It is best to melt and warm the chocolate over night before using.
Finished product should be stored in 65 degree cool environment for up to 4 weeks. Store ganache at 40 degrees.
