This is a pure Ecuadorian chocolate made from fine flavor cacao beans known as “Nacional” from Ecuador. The flavors start with a toasty coffee sensation followed with a round and powerful chocolate finish. This 56% has the characteristic bitter notes of the Ecuadorian “Nacional” cacao. It is good for ganache and mousse and eating! but will not work as a coating as it has a lower percentage of cocoa butter and is somewhat thick in consistency.
